One-Pot Pasta: A Budget-Friendly Meal Solution

Are you looking for a quick and easy dinner option that won’t break the bank? Look no further than one-pot pasta! This simple recipe only requires a few basic ingredients that you likely already have at home, making it the perfect budget-friendly meal solution.

One of the best things about one-pot pasta is that you can use any type of pasta you like, from spaghetti to penne and macaroni. And if you have some veggies and protein on hand, you can add them in as well. This recipe calls for onion, bell pepper, and carrots, but you can also add in spinach, mushrooms, or zucchini for added nutrition. And if you have some chicken, sausage, or shrimp in the freezer, you can throw that in too.

One-pot pasta is not only budget-friendly, but also a great way to use up ingredients you already have. For example, if you have a can of diced tomatoes and some broth in the pantry, you’re well on your way to making this recipe.

Ingredients for one-pot pasta

  • 1 pound of pasta of your choice of shape
  • 4 cups of chicken or vegetable broth
  • 1 can of diced tomatoes
  • 1 cup of diced onion
  • 1 cup of diced bell pepper
  • 1 cup of diced carrots
  • 2 cloves of minced garlic
  • 1 teaspoon of dried basil
  • 1 teaspoon of dried oregano (or other spices by your choice)
  • Salt and pepper to taste
  • 1/4 cup of grated Parmesan cheese (optional)
  • Fresh parsley or basil for garnish (optional)

  1. In a large pot or Dutch oven, bring the broth, diced tomatoes, onion, bell pepper, carrots, garlic, basil, oregano, salt, and pepper to a boil over medium-high heat.
  2. Once the mixture is boiling, add the pasta and stir to make sure it’s fully soaked in the liquid.
  3. Turn the heat down to medium-low and let the pasta cook for about 8-10 minutes, or until it’s al dente.
  4. Once the pasta is cooked, turn off the heat and stir in the grated Parmesan cheese (if using).
  5. Let the pasta sit for a few minutes to thicken up, then garnish with fresh parsley or basil (if you wish).
  6. Serve and enjoy!

  • You can add some protein like chicken, sausage or shrimp.
  • You can also add some vegetables like spinach, mushrooms or zucchini.
  • You can use any type of pasta you like, short or long, thin or thick.
  • You can adjust the amount of broth depending on how saucy you like your pasta.
