Leek and rice pie
Leek and rice pie is very healthy, cheap and easy meal. There are many benefits in leek and if you haven’t started to use it, you should begin with this pie.
Leeks are a type of vegetable that are related to onions and garlic. They have a mild, slightly sweet flavor and are often used in soups, stews, and other dishes. Leeks have a white base and long green leaves, and they are typically sliced and cooked in a similar way to onions. You can eat them cooked or raw, and they are also a good source of vitamins and minerals.

Leek and Rice Pie Ingredients:
- 1 cup long grain white rice
- 2 cups water
- 1 tablespoon butter
- 2 large leeks, white and light green parts only, thinly sliced
- 1/2 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- Salt and pepper, to taste
- 2 sheets frozen puff pastry, thawed
Instructions:

- Preheat your oven to 400°F (200°C).
- In a medium saucepan, bring the water to a boil, then add the rice.Reduce the heat to low, and simmer, covered, for 18-20 minutes, or until the rice absorbed water and the rice is tender.
- While the rice is cooking, melt the butter in a large frying pan over medium heat. Cut the leeks using the food processor., and add the leeks, stir occasionally, for 5-7 minutes, or until they are soft.
- When the rice is finished cooking, stir in the leeks, Parmesan cheese, parsley, salt, and pepper. Set aside.
- On a lightly floured surface, roll out one sheet of puff pastry into a 12-inch square. Place it into a 9-inch pie dish, pressing it into the bottom and up the sides.
- Pour the rice mixture into the pastry-lined dish. Roll out the second sheet of puff pastry into a 12-inch square and place it on top of the filling. Press the edges of the top and bottom pastry together to seal.
- Cut a few slits in the top of the pastry to allow steam to escape, or you can cut your pie in small squares.
- Bake the pie for 25-30 minutes, or until the pastry is golden brown.
- Serve the pie hot, garnished with additional chopped parsley, if desired.
